Pancake Day Fun!

I love foodie holidays, and Pancake Day is a particular favourite of mine. Did you know pancakes are eaten before Lent as a way to use up butter, egg and other indulgent foods which were traditionally forbidden during lent? It’s a great excuse to be truly decadent with your pancakes! Once you have mastered the basic recipe, the space for creativity is endless: from fruit to bacon to chocolate chips, your pancakes can be anything you want them to be. I’ve pulled together some pancake recipes to give you some sweet inspiration for your own delicious Pancake Day celebrations!





Pancakes are an American breakfast staple and a fun way to start the day! For American style pancakes Nigella has a great recipe. These pancakes are thick and fluffy, and perfect when served stacked with a drizzle of syrup. Check out the comments on the recipe for great tips from others who have made them, including topping ideas and gluten free.



Heather from French Press has come up with a yummy twist on a classic chocolate chip with her  Gingerbread chocolate chip pancakes. I would love to make these for friends as a brunch treat- ideal for enjoying with a cup of tea and some gossip!



How great do these Rainbow Pancakes look? This one might be best saved for a Sunday morning when there’s a little more time! This recipe is a little more time consuming, however I love Amanda’s tip about getting the kids to help out. Not only would this make the process (and clean up!) a little bit faster, but my kids will love watching the pancake mix change colour!

For a more wholesome breakfast, I’ve got my eye on these Oatmeal Pancakes from Liren of Kitchen Confidante. With a few tweaks, I think these could be an excellent pancake alternative to my favourite Oatmeal Raisin cookies.
